  • 2 cups water
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 1/2 cup mixed vegetables (such as peas, carrots, green beans)

  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • A few curry leaves

  • 1 cup Foxtail millet
  • 1/2 cup yellow moong dal (split yellow gram)
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 1/2 cup mixed vegetables (such as peas, beans, carrots)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • A pinch of asafoetida (hing)
  • 2 tablespoons ghee

Instructions

  1. The Foxtail millet and the moong dal should be rinsed in cold water in separate batches.

  2. Place them in water for six to eight hours and soak them together.
  3. Mix a smooth batter using a blender or grinder after you have drained and ground soaked millet, dal, and fenugreek seeds.

  5. A good place to let the batter rise for at least 8-10 hours and overnight is a warm environment.
  6. Smear oil on the idli moulds and immediately pour the batter into them.
  7. To make the idlis through, steam them for 10-12 minutes in a steam cooker.
  8. When they are ready, take them out of the moulds. Then, serve them with chutney or sambar.

  • 1 cup Foxtail millet flour
  • 1 ripe banana, mashed
  • 1/2 cup milk (or any plant-based milk)
  • 1 egg (or flaxseed meal mixed with water as an egg substitute)

  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For cooking, may use either butter or oil instead.

Instructions

  1. Blend flour from Foxtail millet, the mashed banana, the milk, the egg, the honey or maple syrup, the baking powder, the vanilla extract, and the salt in one bowl. Blend until well blended and smooth.

  • A pinch of asafoetida (hing)
